I think many of the "traditional sleeper" roles have been filled now. People sort of expect a wagon, or a sedan, or a pickup truck, or some sort of little hatchback to potentially be hiding a gnarly engine inside. You know what nobody expects?
A banged up Isuzu Amigo with a ripped top. Tuck whatever axle, trans, engine, exhaust you need under there and nobody will be any the wiser.

There's one driving around here that has a very built up Chevy v8( not sure which one since I'm going off the badges added on) that's stupid fast.
When I dreamed up mine back in the very early 90's, the bodies were plentiful. By the time one fell into my lap for cheap, they were scarce as hen's teeth. RWD conversion, small block Chevy.

There was a Geo Tracker that ran 10's with a sloppy ls turbo for sale a while. I think it was even some obnoxious color like purple.
The term "sleeper," while appreciated as a concept, officially died when Netflix released Fastest Car (https://www.netflix.com/title/80190009). Otherwise, a 1985 BMW 524TD (LS swap) might work . . .
Any 70s luxobarge now- Fairmonts especially- people think are total sleepers because of the number of us whom do the swaps. Same with any small sedan, i.e. a Rambler, ect.
I think early 90s SUV is a good start, but another idea are Porsche's. These seems to be a decent number of parts cars whos engine's have been pulled for running hearts, and what could be better than angering the faithful with such an iconoclast?
I'd kinda like to do a mid-V8-engine 80's Chrysler mini van. Like, roll the door back and it's all motor.
P1800s are famous for being pretty but slow. Zero to sixty was spec'd at 12 seconds and nobody who owns a Volvo has enough personality to Hot-Rod one.

Fnf era dodge neon replete with erebuni body kit, combat wing and 7 spoke motegis. White of course. Altezza tails, lurid paint the works.
Whatever sort of ludicrous recipe the turbo dodge guys are doing these days. Or...really any fnf car like that, except Honda. Honda is too obvious.
