It's not like there is a shortage of manual Miatas. Can't really see the economy of buying the auto, buying the parts for the conversion and spending the time to do it. I don't have experience with the electrical of the NC but I do know it is straightforward on the NA and NB.
Manual conversions on the RX-8 were difficult, due to CANBUS issues. If I remember correctly, it was changing a lot of wiring. I don't think the NC is too much different.

I seem to remember asking this previously and getting told that the manual cars get forged internals for the engine and the automatic cars do not. So its more than just the trabs swap

Agreed. As far as I know this is not going to be a simple endeavor.

No NC miata will last on the track. The engines are junk. The only solution is the 2.5 swap. Buy a non running manual and a $750 engine from lkq You can do it in a weekend with 4 people in a home garage without a lift.
