ride height seems high, rear especially. You could absolutely stealth camp almost anywhere - a full-size pedo van always looks like someone's living in it but no one would give this a second glance.
Neat. I built a similar bed for my Grand Caravan although I remove when I'm not camping. It works OK, but the limited headroom compared to a full-size van makes it less than ideal. No cabinets - that's where the bike goes (barely).
So, you can enter it in the $2016 Soccer Mom Challenge, then again in the $2017 Moterhome Challenge, AND the $2018 Pedovan Challenge!

Sprinter vans are used for small campers, but they include a bathroom (which the Westfalias did not). There are also the Jucy rentals.
But if you want to know what the modern version of a VW camper van is...it's a VW camper van! Westfalia belongs to Chrysler now, so VW calls it a California and builds it in-house.
