Just missed this one by a few days 

The carious euro classifieds on FB are a good place to start.  Thwy are still pretty available in driver condition although most would need to be returned to stock.  I think I have 15+ different FB groups on the watercooled vw's.

Bump I'd love to find a original low mileage car that's been sitting in a garage 

I'll even pay a finders fee if anyone knows of one or has a friend neighbor etc with one

This is going to be difficult. You need to be looking everywhere, bat/c&b/vortex/etc. 

I really miss my 16v '87. Spent a ton of money on that car and ended up donating it. 

Saw a nice Jetta coupe on the FB Ohio euro classifieds a few weeks back; can't link because I don't have an account. I would love to have another but probably won't since there are a lot of cars I'd rather have in front of it.
