Funny thing is, I like them too, I actually want to own one someday. Just not my 1-day dream car
For me, a Porsche GT3 RS 4.0 with studded snow tires on a frozen lake in Northern Sweden during the wintertime (obviously). I always find it odd that people tuck away their sports cars when the white stuff starts falling; that is when they are the most fun.

Start the morning off at the local Cars N Coffee, afterwards head up to my home road course (MSR Houston) for an afternoon of lapping, then spend a nice relaxing evening drive to dinner at a nice local restaurant... want the car to be the only unfamiliar variable in the equation.

Track is less of a solid point, but most likely Laguna Seca just because I know it well enough in real life that I could get more out of the car. I think it suits the car well too, challenging enough without being terrifying like the Ring would be, and the right mix of corners, elevation, and speeds.
Alternately, a 935 built to hillclimb specs with a modern low-lag turbo setup, on my favorite canyon roads here in SoCal, with the roads closed to traffic. I love 935s and I'd love to set the record on the road I used to drive almost every night in my WRX with one.

Start at the top of Skyline Drive, cruise through the Blue Ridge Parkway, ease into North GA, hit all my favorite roads (76, 129, 180), and then finish it off with a few laps at Road Atlanta. The sheer density of good driving roads in the GA/TN/NC Tri-State area is pretty amazing.

Meaning as long as you don't stop they won't find you? I thought the trace was 55 mph and double yellow the whole way.
