Adjustable how? Do you mean in terms of their distance from the driver? I've tried that on two vehicles, one Ford and one GM, and been surprised at the comfort benefits it offered. I would assume that you'd be thinking about something less pushbutton-activated.
Several of the kit car builders pirate the Ford system since it's so easy. Just a set of pedals on a threaded shaft. Some use the power (preferred) and others just use the shaft and manually adjust them.

I'm wanting to be able to leave the seat in place and adjust the pedals in/out for different drivers. My thought was to put all the master cylinders, pedals etc on a bracket which could slide back and forth, of course it needs to be easily and securely tightened. It sounds like the Ford pedal box might give some good ideas and possibly even a donor system. But that Saturn setup is interesting too.
