The alloy wheels on our Saturn have some curb rash on them, a lot of which has resulted in deep gouges along the lip. Can this be easily fixed, and if so, how do I go about it?

Any good wheel shop can do it. It's just a simple job of welding on new metal to build the lip up and grinding it back down. Though it's probably cheaper to find good wheels in the junk yard.
I was a bit afraid of that. I'll have to look into the repair costs--and what bolt pattern the Saturn has--as I think I'll be fitting stock wheels when the car goes to a new home.

On four bolt wheels, the pattern should be the very common 4x100, with a large center bore (I think) shared with FWD, four bolt VW's.
Check local salvage yards for good replacements, and keep the current ones for full-size spares.
Aren't Saturns only worth like $50? Find a car with a good wheel or two, buy it for the wheels, swap your rashed ones on and throw it in the trash.
Sorry, I don't have any real help.
