I installed some coils in a SLA rear suspension. The ride height is three inches too tall... My spring motion ratio is .2413

(14.25" lower A-Arm with spring center at 7")

So I multiplied 3 times .2413 and got .73

So if I cut almost 3/4" off of the total free height of the spring, I should get the 3 inch drop, right?

First I think you have the motion ratio wrong. Eyeballing it you should get something close to 0.5 (I assume it's 7" from the inner mount to the spring mount) - when I work it out it's 0.49123.

Second, keep in mind that when you cut the spring you'll also increase its stiffness (to an unknown value - I tried to calculate spring rates from measurements once and I'll only trust load testing now), so you'll get somewhat less drop than what you calculate.
