Hybrids do their best fuel sipping around town, not necessarily on the highway.

Relative to non-hybrids, yes, but the highway improvement is still significant.  At highway speeds aero becomes a huge deal, and most hybrids are designed with aero in mind so there's still a big delta vs. non-hybrids (50mpg vs. 35mpg highway vs. 50mpg vs. 25mpg city).  ecomodder.com has a bunch of stuff related to getting the most out of any car (mpg wise), and a boat tail is probably the best mod in terms of highway mpg improvement.  I've only done the wheel covers, lower grill block, and the rear wiper delete on my prius.  Thinking about the mirror delete as well but it's a bit more time consuming...

My son can pull down 48 mpg in his Kia Niro hybrid on the interstate. He was grumbling a little about it because he was more used to getting 51.

Over 50k miles at $2.69 a gallon, that is less than a $200 difference.
