Properly hard question to find the answer to. I'm pretty confident you won't find the answer stated online by now, having even read an Italian article about the teams founding that mentions the design but not the reason for the number of stars. I have a possible answer but I'm going to do some more research before I send anything in.
My guess is it was done as an ohmage to get a big money sponsor in who was waffling.
Like:
"So, Mr. Vanderbuilt, do we have your support for our program?"
"You make a very convincing argument but it is a lot of money, even for me."
"Mr. Vanderbuilt, you have 8 grandchildren, right? How about we put 8 stars on the top of the logo and you can tell each grandchild which star is for him."
"That sounds excellent, you have my full support. Mr. Johnson will make a check out to you before you leave. Now tell me again, how many will see these race cars?"
I would be willing to bet it had to do with race wins. Perhaps the 8 is how many he had for a driver, and the later maybe how many Ferrari had in series and stripes number of championships? Just a guess though.
Or maybe they just though hey, this blank space needs something, what do you say we throw some stars up there?!
I think it has something to do more with Luigi Chinetti's number of lemans appearances as a driver. The first time I can tell the 8 star logo was used was at the 1950 Mille Millia. That would have been just shortly after his 8th appearance at lemans.
I have no evidence but it was not used for long and it's the only link that I could find.

We really need to start a Frugal American Racing Team. With 2,018 stars in the logo. You know, for the Challenge.
Thread ressurection, was the answer found? Here are the possible answers I scrounged up:
8 was the number of Italian constructors' teams to win the F1 drivers' championship up to that point in time.
8 was the number of laps the NART Daytona 365 GTB/4 finished ahead of other GT cars in the '71 24 hours of Le Mans.
If Wikipedia is correct, NART's first race was in 1958.
The 8 star logo could have been created during the 1957 season and based on the number of championship races that had made up the 1957 season (which was 8)? Or the number of countries where the championship races were held?
