Before I splurge on the one book I found on the 'zon (see below), are there any other good books or videos on setting up and tuning these carbs properly that I should be aware of?

I've seen that book in PDF format floating around a few sites, might want to hit up Google first. It's pretty good for knowing the basics, it also helps that Dellorto's part numbers make more sense than Weber's.
Since Webers and Dels are very close to the same, here are some basics.

CB Performance / claudes Buggies were the company that started importing them pretty early ,
You might do some Google searching with their names
There is an old webpage still online that detailed what Racing Beat did tuning-wise to the Dell'Ortos. I believe it was at gruntled.com. Not the answer you are looking for, but an additional piece of data.
I'm a well-versed carb guy. The first Dellorto I did wasn't voodoo. Pulled it apart, cleaned, assembled, ran like a top. I didn't notice anything out of the ordinary or complex about it.
As far as altering them, I'm clueless, but if my experience with them is anything like other carbs, they're pretty straight forward.

I had found some of that data, either via ausrotary or rx7club. That's how I found out that RB modified the emulsion tubes...

It's been a while since I played with sidedrafts, and I suspect once I got the base setup decent, some further mods/setup will be necessary to get stuff like the vacuum advance up and running. Plus I'm after data like float level etc as that's likely an issue with the one on the Rollerskate.
