Wow that was a long subject.
I just picked up two rear Bilstein Sports (well, yellows anyway) at the junkyard for my E30. If I recall correctly there is a spec for how fast the strut should take to decompress from a fully compressed state.
Both shocks decompress at the exact same rate, so that's good.
