So I have this brand X strut tower brace that I bought a number of years ago for my A2 Gti. And my question is, is there anything to be gained with welding the strut tower brackets to the strut towers rather than bolting them?

Naw, no trick question. And AFAIK, I will be the last owner of this car. I guess I could bolt now and weld later...

+1 You've got more material permanently stuck to your car's frame, that's about it. No difference in stiffness.
