I'd like to build my own exhaust. I have a source of pipe and I can weld, but need help finding a good source of exhaust flanges of various shapes. As is often the case lately, Google is working against me rather than for me. Surely there is a place that supplies flanges of various sizes and bolt patterns (I'm not talking about the manifold).

I've built a couple of exhausts by taking a factory manifold and cutting the flange off. Only works if it's a tubular style manifold and not cast though. I also built one for an LS engine using an easily sourced flange, but, well, LS.
What engine? Anyone with a waterjet can cut one for you if it's weird, there are at least two possible sources in my little ranch town. Probably more - the offroad shops tend to have cool tools.
They are usually very engine or brand specialized. I get them made for my engines cut locally because no one makes them in masse.
What's the setup?
If you're just looking for basic 2 or 3 bolt clamps for 2 or 2.5 pipe any auto parts store can get cast or stamped ones from walker exhaust or other suppliers. Check the walker catalog.
As others have stated the head flange could be a little more challenging depending what you are working on.

Yep, Walker might be your best choice. Things being so darned specialized these days can make it tough to fab stuff out.
Burns Stainless offers them in stainless.
My bad, I missed the "not the manifold".
Drop by your local exhaust shop. They'll have a wall of flanges. They may let you borrow some and you can certainly play around.
Me, I like band clamps. Easy to R&R, adjustable for both length and rotation, easy to use, low profile.
I've had great luck finding flanges at Summit Racing. Their house-brand stuff works great.
