I run a 2.3 fuel injected Ford Mustang in Lemons racing.   With our .075 shaved head, ranger roller cam, CAI directly to the throttle body, header, it runs fine, plugs look a little lean.   

This is the old OBD1 system from the eighty's, not even sure how it works.   There is no MAF, appears to run the same with or with out the 02 sensor hooked up, as we ran a partial race with the wires burned off and no one noticed a difference.  Maybe because it only runs at WOT on a canned program?   It only makes modest power if over 190 degrees, under that a little less.  This is the only clue that the ECU is doing something.

At what point is the stock FI with an adjustable regulator going to not keep up with the next round of more motor.   Next as in 2.5 stroker, performance cam. 

I have on the shelf an Offy intake and Holley 390 carb for it.  

Would going carb just offer more fiddling, or some performance gain and less stuff under the hood.  I've read that these 2.3 cam make more power if fed more fuel.  

Any thoughts.

There are plenty of larger injector options thanks to the turbo variants of that engine- I'd say, if what you have works, get a wideband and berkeley around with increasing the fuel pressure/swapping injectors around.  You can take the wideband off when you're done to stay in budget.

We may just do that, I wanted one for another car anyway.   I think the stock ECU can handle up to a 17 lb infector, stock is 14. 

Budget?  Once you race long enough, they just look at you and ask, same car...Yes, same team...Yes, bribe? Maybe, OK carry on.   As long as you stay off the podium you can just blend in, we came in fourth last race, that was a close one.

Keep FI for turbo in the future? Then again, blow through sounds pretty cool too.

I know, I ran LeMons races where the hood wasn't opened during tech/BS, just mentioned it in case you were worried about it.  You could also experiment with "decapping" your existing injectors if you have spares.

Since you already have the manifold and carb on hand it may be worth a try, as long as you're comfortable with rejetting the thing to suit.
