The Fiat has aftermarket ones installed by the dealer. They warmup very quick and on high become almost uncomfortablely hot.

Haters gonna hate. I love my heated seats. I installed a set from heatedseatkits.com about 6 years ago in my wife's mazda 3, they worked excellent with the cloth seats, but you couldn't use the high setting for too long, it was too hot. You had to switch to low after a few minutes. The switches looked and felt like an oem item when installed.

I'm about to order another set of them for the replacement mazda 5 we got.

This time I'm getting some hog ring pliers to use on seat reassembly.

I'd plan about three hours total to install your first time.

Too hot is a problem I'd like to have. Did you go for the basic $90/Seat kit? Or?

Sounds like a bad thermostat, very good idea to fix that.
It runs 210F in summer and 185-190F in the winter when its cold (below 15F outside). Do you really think that the 20F difference is thermostat?

If it calls for a 210 stat, and I'm pretty sure they do, then yes. You probably have a failing one that won't shut all the way, which will slow warm up, hurt gas mileage, and make it harder to drive moisture buildup out of the oil. Pretty sure it's only two bolts and a radiator top off to swap it out.
