Re lap when the seat is to narrow or just a quick clean up. Grind when seat or valve face was pitted. Often engine MFG will spec a 1 deg difference in seat angle vs valve angle, but not all. You need the seat wide enough to pull the heat out but narrow enough to still seal. Dykem or even a sharpie are your friend here.
