Just to update. I never did buy a Wrangler or other Jeep. Things in life changed and I decided to keep my '16 Regal, although I've traded used cars in about every two years for the variety experience. I really like my Regal so glad I kept it. It does everything I need it to do and is comfortable... and paid for. And this after DD'ing an S197 and E92.
I was also considering a Volt until the high gas prices hit and they became sparse. Maybe a Bolt down the road as I want to try EV's. But at only 36K miles my Regal is a keeper for now.
I did buy a '22 Colorado ZR2 ECLB in November of '21 for truck stuff. With locking F&R diffs, factory lift and Duratracs it should off road well but ain't got no time right now. Hell, I haven't washed it since new... and I'm a detailing guy.

I have owned a CJ7, several TJs and now we have a JL Unlimited that is my wife's daily. She wants to drive nothing else.
Ours is the 2.0 turbo which has mountains of torque and good hp too. We see about 24 mpg highway, 19 in town with slightly oversized tires (32s). The 3.6 V6 models aren't much worse. I find this to be very good considering the capability you are getting.
The JLU is the most refined Wrangler they've ever offered. If you want a civilized on road ride, buy the newest Wrangler you are comfortable to pay for. Also, the longer wheelbase and extra weight of the 4 door makes a difference in the ride and drive. If you want a relatively quiet ride, look for one with a hardtop.
There simply is no more competent off roader than a Wrangler for the price point nor is there another from whom you can strip the top and doors for true open air fun at anything near the price point.
There are tons of other 4 wheelers out there with better road manners. Everything in life is a tradeoff, isn't it?
