So, I'm curious how they get this bacon to the customer. Only time I've ever ordered meat from another state, they had to overnight it, with dry ice. Seems like bacon would go bad before it made it, but maybe I'm missing something.

Actually got a shipment today from Benton's. My aunt and uncle send us a few lbs for the holidays. It comes in a priority flat rate envelope, no refrigeration needed. Pretty strange. It WILL make the whole pantry smell like...bacon, so we keep ours in the freezer.
another tip: it's very salty (hence the no refrigeration), so if you're one of those weirdos who likes to bake/roast your bacon, like me (this stuff is thick, so 350 for 20-25 mins usually does the trick), doing so will amplify the salinity even more. It's the best bacon I've ever had.

so how do you reduce the salinity level? rinse first (is that sacrilege?)
