I'm looking for a small automatic car to tow on a dolly behind a Class C motorhome.  CVT is out of the question, but can a shiftable automatic, placed in neutral, be towed on a dolly?

A dolly or flat-tow?  If you're going to flat tow, then it matters - you need something that runs the lubrication pump via the output shaft.  But if you're using a dolly, then the driven wheels are off the ground, so it completely doesn't matter at that point.

Get a Suzuki Sidekick or Geo Tracker or Suzuki Grand Vitara. They all have manual transfer cases & can be flat towed, even the auto transmissions.
You really don't want another thing (a tow dolly) to deal with while towing a vehicle. We've been motorhoming & towing different Suzuki's for years.
I see lots of people doing it but I sure wouldn't want to.

I think most of the people using a tow dolly are the ones who already had the car , then decided to do the RV thing. This from a couple people I've asked.

But yes an auto trans fwd car can be towed on a dolly with the front wheels on the dolly & rear wheels on the ground.

Any FWD vehicle can be towed on a Dolly if the front wheels are on the dolly. Only if the vehicle is AWD does this become an issue. But as mentioned in above postings there are some vehicles that can be flat towed or on a dolly and be OK.  And any manual trans car can be either flat towed or on a dolly.
