I like a lot of race paint schemes, but if I had to pick a favorite. I have to go old school Hotwheels.
Hopefully not too off topic - I think the best liveries make the car instantly recognizable at a glance, even at speed. Gulf, Martini and even simple Shelby stripes, achieve that goal. Jeff Gordon's DuPont car in NASCAR fits that description. What I'm wondering is whether those examples were instantly recognizable when they were first used, or did they only become so after time? I'm having a hard time thinking of current day, "new" liveries that meet that description. So maybe my premise is flawed.

If 'current' schemes stayed the same for more than a few races it might be more likely that a single recognizable one would stick. However, with the ease of changing livery due to wraps and the fact that teams are chasing smaller and smaller sponsors the livery gets changed more often than they used to, leading to less consistent and less iconic liveries.
The previous may be most easily seen with current NASCAR organizations changing 'paint schemes' every weekend.
if we're talking instantly recognizable, I look no further than Darrell Waltrip. Could you mistake that car for anyone else's?
"Simple" liveries like Gulf, JPS, and Petty. For more Nascar like big logo, anything from Castrol, particularly Force racing.
I don't know that it's iconic, but among modern liveries I really like Patrick Dempsey's 2015 Le Mans car:

Yes, I know the Group 44 '66 Dart was before they added the green striping.
