I have a newly rebuilt 1979 ford 460 cubic inch engine. At idle the oil pressure is in excess of 80 psi. I'm afraid to run it long enough to get the oil hot to see if the pressure will drop. Any ideas?

Sure it's not an instrumentation problem?

Yikes! I had a 430 in my Continental and that thing barely moved the oil pressure gauge and it was a pretty healthy motor. My bet is on the gauge.

What oil is in it?

I have seen jammed pressure relief springs in some rebuilt, hell new, especially those junk HV deals, oil pumps. Change out the reading gauge and retest. If it is still that high, put on a regular pressure pump on it and retest again.

Sometimes certain assembly lubes will clog up passages, screens, etc... Maybe this happened?

Or RTV. I have seen that get in turbo feeds and oil passages before causing some weird problems. Good call.
