I've been looking all over the place and can't find this info: is there any OEM application of the Ford 8.8 IRS which came with 3.73:1 ratio final drive? I know these were pretty readily available in solid axles, but I'm just interested in the IRS units (don't want to have to swap the gears).

The cobra might of had it as an option at some point between 99 and 04......I don't think any before or the Thunderbird/mark VIII had those ratios. Worst case, I might have given you a lead in where to look
Yes, I have recently pulled a posi out of a 2002 Explorer IRS and it had 3.73 gears. The yard had 2 other IRS Explorers. The other 2 had 3.55 gears and 4.10's but no posi's in them.
Also it is pretty easy to swap gears. I do it all the time.

I'm pretty sure TBirds/Cougars/MK8s only came with 2.73 (5-speed only), 3.08, and 3.27.
