I'm coming down to the wire on my challenge build this year (a datsun roadster body on a formula car chassis with 2009 cbr600 power), and I would like to press the easy button for some oil control. 

I've read that a simple baffle plate sandwiched between the oil pan and the motor case that has a cutout for the pickup tube and a few holes for drainback is a very effective solution for keeping oil in the bottom of the pan in a car application instead of a bike application. But I can't find anyone who makes or sells something like this, I'm not even really sure what search terms to use or what to call the part. I can probably make something like this myself, but looking at my time budget coming up to the challenge buying something already made could be a good choice. 

Anyone have any thoughts?

I would try and copy this adapting it to your application made of some aluminum sheet metal.

The stunt riding guys have similar oil control problems, even if they occur for wildly different reasons.  That's probably where your bolt-on easy button lives.

The F500/600 guys use some kind of baffled pan, you can probably find the exact solution on the net.  Sorry I can't be more help but I run a two stroke.

We ran our FSAE car with enough oil that it would just touch the crank engine off (~1qt overfull).   We ran 1st generation CBR600 engines.  In some of the cars We did not have a baffle plate but some did.  We ran some with the bottom 2" cut off the pan, those had an accusump.  They ran for HOURS without having oil problems.  To my knowledge we never had an engine die because of bad bearings.  Actually I'm not sure we ever had an engine die.  

I would think for the challenge running just a stock oil system overfilled will be fine.  Post challenge you may want to look at something different but I bet you can run for a long time with just an overfilled stock system.

These are great ideas folks, thanks! 

But nocones, that might be the winner - just running a qt over is an easy button for sure.

Problem is that even though it's a legal motor nobody uses the Honda or Yamaha (except for me with the R6), they all use the GSXR.
