A relatively small-ticket non-insurance job? If you pick a bigger, busy shop id expect it to take a very long time. 
Of course there seem to be plenty of shops struggling right now so you could probably get one of them to promise you the moon and get it back in a reasonable amount of time if you're 50% of their current work.

Yeah, in that vintage, if the Ford's not a diesel, I'd be going with the GM. LS motors are going to be a much better proposition than a modular when it comes to a truck.
