Bump from the dead. I've found this site that has a lot of old defunct tracks (and current tracks) on it. Some are not in the Ghost Tracks books. FYI. The site isn't the greatest, but some cool stuff.

Sometimes, those ghost tracks come back to life...
Saratoga Auto Museum has an annual event on "Lost Speedways".
It is mostly on ovals but they get some intersting speakers etc.
