I really wish I had started this thread before selling the car so I could test things out.
Found a gas pedal mod that appears to move the gas pedal towards the firewall, increasing leg room and reducing knee angle.
I will be trying most of the suggestions as soon as I take delivery of the next one.
Easiest way to move the gas pedal: grab it and push. The metal bar is flexible. Just be careful you don't adjust your way out of full throttle. Personally, I'd concentrate on the seats first.
