My 1995 Miata M had a Viper 300 alarm system installed in it when it was new. I have never had a car with an aftermarket alarm in it and I want it gone. Is it as simple as tracing wires back, removing them and soldering up the ones that were cut? Any hidden things that I need to look for?

It is probably as simple as that but likely not going to be easy or quick.
Most of the connections should just be tapped into. The only wire that would be cut that will need to be re-connected will be the starter or ignition wire depending on what one they used to disable starting the car.
The rest of the wires (switched ignition, power locks, power) are just tapped in. Siren, LED, motion sensor (if equipped) will only be connected to alarm itself.
I would not be too worried about removing, look closely at the tapped wired to make sure they still have good integrity and not partially cut by crappy scotch locks.
IME the ease of removing the alarm is inversely proportional to how big a hack the installer was. I've seen very few decent and clean alarm installs, so prepare to undo a fair amount of unnecessary butchery.
You might be able to find an installation manual for this alarm online, that would probably be a good starting point. But yes, in the end it's a matter of removing the taps and rejoining cut wires.
I removed the alarm system from my Miata. Time consuming but not too difficult. Working up under the dash was a PITA in my advancing years but worth the time and effort to rid the car of aftermarket crap.
