In the last week or two I noticed a chirp sound just before tick over. Just one quick chirp and then the engine would catch and I could just hear a little hissing. A quick google search said loose spark plug.

Sure enough, yesterday I found 2 plugs were loose. One was about half a turn out, the other much less but still loose. The coil boot on the first plug was covered in soot.

How does this happen? The plugs haven't been touched in 30k and this problem just suddenly started. I did do a track day a couple of weeks ago, could heat cycling cause this?

Strange.

Probably a combination of vibration and heat cycling.

Also, imo, while going longer periods without need to change or clean re-gap plugs (by design) is convenient, they are also prone to being neglected. Touch your plugs more :)
