In an unheated dry garage on an engine stand before it needs to be freshened? Should I pull the head?

(The engine in question has metal matrix composite cylinder walls)

yep, if it turns, prime the oil pump and throw some fuel and spark at it.

Pull the plugs, shoot some oil in each cylinder. Crank over by hand. Prime oil pump if possible. Crank until it builds oil pressure. Drive.

^^This one. Building oil pressure before letting it spin on its own is key.

Clarification, crank until it builds oil pressure with the plugs out. You can spin it up damn near dry in that situation and not hurt it.

I just started a Continental straight 8 in 1926 Diana roadster today, after what was at least a 5-year slumber.

She lit off without a hitch.

Your modern engine will be fine.
