In the case of Per's LeGrand Mk 18 project, I guess the answer is three. He just replaced them in addition to making a few other changes prior to a few late-season autocross events.
Here's the latest update. I'm scared of what he's going to do when the season is really over!

Five. One for the clutch, one for the front wheels, one for the rear wheels, one for the handbrake, and one on the handbrake that disengages the rear axle.

Hard to say, there's the front uprights and most of the original central aluminum monocoque are original---original pieces of aluminum that is. The changes to the front are essentially recreating aluminum panels that were pretty beat up with multiple holes, as well as some updates to the braking/cooling/aero.
