I should have asked you, where are you? If near me shop at my wood store. There is no cash register or any place to check out. In fact the owner will probably help carry out your selection or if you need to use his planer jointer shaper etc. show you how to use them.

Are you going to use them like a regular pickup with metal hold down strips? If so you can probably forget my warning about tannins. Just put something like shipping tape any place metal will come in contact with the wood. If you're tidy about it nobody will see.
No, making rub rails for the floor. Just something to take the blow of use and keep the stainless free of dents.
