my only question about the Jersey Skiff boats.. they spend so much time in the air.. how do they get enough water to keep the engine cool?
BTW.. Mays Landing is about 20 minutes away from here.. very nice place to sail or pilot a small boat

Presumably they're using a automotive cooling system, or fresh water cooling, or they just aren't really out of the water that often.

This picture, to the right of the prop. I'm guessing that's the water pickup. Probably consists of a tube stuck in the water. Might be in a trim tab.

jet boats are interesting because you need to add throttle to turn. All powerboats turn from the rear (stern) and a jetpump might have a small skeg hung beneath it.. but without the water being pumped out the back in the opposite direction you want to go, you are not going to go anywhere but straight
