I'm in the process of building a caged, stripped, 67 Lemans Road Racer with a 650 hp LSx and a modified T56.
... and I plan on driving the snot out of it, rain or shine.
As long as you have enough torque down low in the RPMs, as long as you don't go deaf, and as long as it doesn't overheat in traffic, I call it a street car. Basically as long as you can use it to commute without needing a left knee replacement or getting in and out of it ruins your 3-piece suit, its good for me.
Streetable of course means a thousand different things. I think that it means somewhere between "bone stock" and "street legal". Where that falls for each person would be different.
... and on that note, I've owned some bone stock cars that I wouldn't call streetable.
