I think a bike project of some sort sounds like a good fit. I definitely find bikes more relaxing to work on than cars - simple and easy to access nearly everything. Maybe a cafe or scrambler build, restore an old airhead Beemer, the aforementioned Ducati thing...

Or how about a cheap 4x4 build? I love going exploring in the Cherokee when I'm bored on a Saturday afternoon. Don't have to spend a fortune either if you don't have your heart set on crawling over cabin-sized boulders.

Sounds like you really need a self (or SWMBO) imposed mandate that personal/toy projects can only be taken on one at a time and must leave the hose X months after they entered the house.
