I'm back on my bike after my broken ankle. The weather is much different in central Texas than it was 5 weeks ago. It was lower 40s this morning and will be in the 80s today.
I ride in a 2 piece textile suit. It has a waterproof zip in liner, which I have used every morning this week to cut the wind. It does a good job and I'm not cold on the way to work. However, I'm sweating when I get here, as there is no breathability.
What can I use that will cut the wind, but not make me sweat balls and be all clammy when I arrive at the office?
I just throw a light wind breaker on under my mesh textile jacket until it gets down in the 30's. Colder than that and I'll switch to my solid textile jacket with the zip in liner and layer under that if appropriate.
It almost time to throw my big windshield and hand guards back on. Cold front coming through Thursday night so Friday morning will be very cold.
When I had my GS500F, I usually wore a fleece pullover under my jacket when riding in freezing or near-freezing temperatures. It seemed to do a decent job absorbing sweat. Unzipping the jacket vents could also help with breathability.

So far I like my Speed and Strength Locked and Loaded jacket.
With the outer shell and quilted vest it is very warm. Too warn really for San Diego weather. I haven't used the inner vest yet, maybe this winter.
With the outer shell on it's plenty warm on chilly mornings, even with the vents opened. When it gets toasty outside just take the outer layer off and you have a mesh jacket as the core. All shoulder, elbow, and spine padding is attached to it so you don't lose any safety stripping down.
