Somebody just traded in a 96 Infiniti G20 at the store I work at. It looks like a regular one with cloth interior. Are these the ones to have or are the T touring models the ones to grab?

I think the T models are "better" but even the base cars are fun. They're '90's Sentra SE-Rs in sedan form. My wife had one many years ago, and it was a hoot to drive, even with an autotragic.
Yeah, the Touring trim had an LSD and leather interior and some other goodies, making it better. But base still is a FWD, SR20-powered sedan, so it's nothing to scoff at.
Sport models (5 speed Sport models are referred to as "5ports") had the LSD, and are favorable in terms of handling. IIRC, aside from the LSD and some some trim (spoiler and badging) they didnt have much if any difference under the hood from a same-year base model. There were differences between model years tho. The 1st gen (up thru 96) were P10's and had a hydraulic lifter cam setup (91-93 intake cams were "hotter" - increased lift and duration). There was a production hiatus for 3 years. Nissan resumed the G20 in 1999 with the 2nd Gen P11, which was the only year of the Hydraulic lifted P11 SR20DE in the gen 2 format. After that, the Hydraulic lifter was replaced with roller rockers, which had a redline 2500pm lower. A lot of folks would start with 99 base models, and swap in the trans from a 5port (case is different IIRC, so you cant simply swap the open diff for the LSD), and swap in the hotter cam with an adjustable gear - SR20 likes some overlap scavenging in the exhaust, so you can get about 15 extra ponies with the cam and tuning.
The Its been a little while since I got out of the G20 game, but I miss my P11 more and more every day. The SR20 is an incredibly tough motor, and parts are (were) pretty easy to come by, and aftermarket support was more than adequate in the mid 00's.
Theres a reason a couple of Nissan SR20's would pull a premium one week before race wars.
Also VLSDs from the g20t can wear out as mileage gets up there, so there's probably not a huge reason to hold out for a "t" trim.
