There are some pretty common stroke lengths for master cylinders, 32, 36, and 42 mm are the most common IME, mostly to do with making parts with existing tooling. The stroke has to be long enough that the swept volume meets some rule of thumb for having some safety margin above the “fully worn / fully retracted” pads and rotors. There’s probably a minimum requirement in the FMVSS135 or ECE13 but I can’t tell you OTTOMH.
