On my PWC, there is a temp switch or sensor on the exhaust. It is not in the exhaust stream, in fact, it bolts to a metal plate welded to the exhaust. It's just a threaded hole, only the threads of the switch touch the metal. There is only one wire coming from the switch/sensor.  

 The wire snapped off and there is no way to reconnect. My question is, what is this thing doing? Can I replace it with any temperature switch/sensor that fits the same hole and has one wire? The flat end of the sensor is just out in the air so length doesn't matter, but I don't know if each sensor/switch is set to a different setting.  Like, maybe this one opens at 100° but the next one opens at 200°.

Does anyone know if one wire indicates that this is a sensor rather than a switch or vice versa? Is there some way to test it with a meter to be able to order a similar unit? I have the make and model but it's from 1994 and I can't find it anywhere.

sure it isn't a single wire 02 sensor?

No idea on the interchange stuff, but I think that this might get you back in operation for fairly cheap.
