So, I'm apparently a little ignorant of this stuff. I've always just bought whatever width I needed at the parts store. But it seems that there's different thicknesses and grades of stick as well.
How can I tell what im looking for for a particular application? Like a piece of moulding with a lip next to the tape strip that needs a slightly thicker tape, or a flush piece that needs thinner, or....
How can I tell what's what when im ordering?

I just ordered a roll of this for a miata front lip. Will still put a few bolts on. I believe its the same I used for the rear spoiler a few years ago (has the Z clips holding on too) thats holding up well. My brother's planning to take the same for his RX7 side molding.

I recovered the LaSalle grille with chrome mylar tape. VERY thin thickness but various widths available. My neighbor has a gray Jeep Cherokee, when at a car show he met a guy that does pin striping. He laid down a maroon and a light blue line, side by side just below the belt line. Hardly noticeable but it does break up a big slab of gray. IIRC it was ~$100.
Usually 1/32" or 1/16" double coated polyethylene foam tape depending on how much gap filling you need. Spoilers will be 1/16", emblems 1/32". Usually acrylic adhesive - much better than rubber for outdoor aging and resistance to the elements. Feel free to send me a link if you want me to look at something

3M should still be fine. Top shelf stuff is 3M VHB ("very high bond"). It's got a unique manufacturing process to make the foam and incorporate the adhesive in one step. Traditional foam tape (3M, IPG, Shurtape, Avery, etc) are a post-production lamination of adhesive to foam. This is mature technology, and most of the Asian imports are also very good products. If you have a local body shop supply house, they'll stock it.
