As stated further up the thread, a bilge pump fan, or "marine fan" as I call it. Mount two of them on the dash or under the dash with vents to the windshield, wire it up to power, and Bob's your Uncle!

Back when the WRC was still cool and relevant one of the front running teams had to retire early from rally New Zealand because their car did not have a defroster in it and it was rainy and foggy for the whole event.

Yes, even real race cars need a heating and ventilation system.

Go to the junkyard and find an old bread van and pull the heating system out of that, they are very simple and sort of modular and Universal.

^Those work excellently , just another voucher. I've even seen some pretty trick setups with burying them under some form of the dash with some access holes in the top. You don't even notice they're there.

Carroll Shelby has something in one of his books along the lines of "if your team can't build something to keep the windshield from fogging - don't remove the damn factory system".

Since the rotary heats the floors (as mentioned above) your heat source may not need to come from a dedicated heater core. Mount the intake for your fans near the hottest part of the floor but with enough flexible hose to put a water trap in line to the fan. From the fan outlet may a simple plenum with slots to blow across the base of the windshield at key locations.
Make sure the rag on a stick is handy as a back up plan.
