Manifold gaskets

I already asked this question on a VW forum and got a mixed answer, so I'll try it here. I'm changing my exhaust manifold on my 1991 VW GTI 16V. The 4 individual gaskets hac=ve a metal side and an "organic" side. Does it matter which side mates to the head?

Taking a SWAG here, I'd say put the organic side to the head. The manifold will run hotter than the head.
