2013 Mazda 5 auto. Here's my issue:

The throttle response seems to be on a sliding scale. From a stop, or at parking lot speeds, sometimes I'll give, for example, 10% pedal, and get what seems like 2% actual throttle. Sometimes 25%. And no rhyme or reason. It's done this the entire time we've owned it, going on 4 years, and I have had no codes relating to anything to do with throttle. 
 

I THINK this is due to the computer attempting to adapt to driving style? But I'm not an expert. Usually my wife drives, her car, but we trade often. But last weekend I drove exclusively down to LA, probably 1200mi all told, and still the thing is inconsistent to my input. Driving me crazy. 
 

My question, is there a switch or a fix without installing some aftermarket controller? Do I just put it into manual shift every time I drive? All I want is a 1:1 relationship. This seems like a stupid problem.

There's a 99.9% chance that your throttle demand is a torque based one.  So your pedal is translating to an engine torque, not directly a throttle position.  And that demand has an RPM component-so picture a 3d table that on the X axis is RPM and the Y is pedal position, and the output is engine torque demand.

The shifting may have some adaptive component to it- but I really have no idea how Mazda maps out their shift schedule.

Given the amount of safety layers in the systems, there's no aftermarket tuning for that.
