So most Miata hitches are rated for 200 lbs tongue weight. I was wondering, if the hitch ball and the intermediate piece aren't installed, (so just the crossbar between the old tow hook points) would that be strong enough to jack the back end of the car up on? 

I know many tubular bumpers for drifting, etc have a jack spot built into them, I would think the hitch could take it.

Yes. I use it often to jack mine up depending on what I am doing. If I just need to get it up quick to change a tire or reseat a bead I'll use that. If it needs to go on jack stands my jack doesn't go high enough under the hitch so I have to jack it from the diff.
