The 2.0T Santa Fe moves pretty quickly. Damn nice little CUV.
I kinda liked the XV Crosstrek (with stick) but I wouldn't call it cushy. There are a lot of hard plastics. And much as I liked the Fusion, no way would I recommend it to my mother, MyFord Touch would drive her nuts!

CTS-4. There's pretty solid lease deals, and/or they've been around the new body style since '08 so you can find all kinds of certified/used/off-lease cars for quite reasonable. Stay away from the super high level sport model whatever and you won't get the low pro tires.
My mom (age 60) absolutely loves hers. Her lease is up in a few months and she's getting another one.
Your mom has had luxury-ish rides (Volvo / Audi), the Caddy will tick those plush trim boxes. My dad has a Subaru, and after my mom got the Caddy (previously had Olds/Pontiac/VW's), now the Subie feels cheap inside, so I don't think Subie is the answer to a previous Volvo/Audi owner.
Plus made in Michigan (Lansing), will get props in Detroit.

If she is coming from an Audi, I figured the extra luxury/power of the SHO would be desired. And that the price wouldn't be offensive.

It took me by surprise, but I was actually digging the '13 Escape we rented this summer. Perhaps a coincidence, but we ended up with it because my mom was with us (she has back problems and needed a particularly comfy vehicle). She was ok on long drives and I didn't feel like I was in a handling penalty box. It could get out of it's own way with the Ecoboost and it only used the full awd under acceleration, reverting back to fwd while cruising to save a few mpg.
It also got my subjective bonus points for not looking weird or awkward like so many other late model cars. I'd actually say it's pretty attractive for a CUV.
I'd also note that MyFord Touch was easier for me than it was for my mom.
That said, I like the Flex option as well. Love that boxy shape and is probably more practical.

I have a Volvo S80 AWD. It is the definition of Euro-plush. In winter I run 16" steelies with 50-profile tires. Is 50 too low for you?

Aren't there Mercury and Lincoln versions of the 1st gen. Fusion AWD? Those probably have cushier suspensions.
Wife(age 64) and I spent 2 months test driving every mid-size sedan we could find. One of the major criteria was rear seat size for her shopping trips with her 3 sisters. We ended up with a 2013 Subaru Legacy and the AWD was a nice extra we weren't looking for. Only has 1K miles on it so far but she loves it.
2000-2009 S60 2.5T AWD wear 205/55-16 or optional 235/45-17.
The 205/55-16 "should" be fine, though I say that and SWMBO managed to bend two wheels on the Jetta which has that same exact tire size, just commuting in Columbus.
I always knocked the new Tarus until i went on a road trip in one. They are NICE cars. I'm dead serious. They can be had with awd and look pretty good too. It is a big car though.
