The folks at Grassroots had put together a nice article about wiring up a helmet microphone:
Sampson Racing Helmet Microphone Kit
I have found a place that seems to offer a Chatterbox-IMSA/NASCAR adapter:
MH Motorsports Chatterbox Adapter
I cannot seem to figure out what kind of adapter would be needed to convert a NASCAR or IMSA plug to whatever it is the Nady uses. I've got an email into their support but who knows how long that'll take...
I'm going to give them a ring later today, but I figured I'd throw an ask up here.

It looks like the Nady uses a 3.5mm stereo plug. Go to radio shack and get a 1/4" stereo to 3.5mm stereo.

The .pdf says that the tip is negative, hopefully it's the same pinout on the NASCAR style connector (1/4" stereo). Or you will have to get the two ends and a length of shielded cable and solder up a short adapter wire.
I'm not sure about the IMSA connector, but the other two are stardard audio style connectors. Unless I don't understand the problem.
Bring the two devices down to Radio Shack or a DIY type electronics store and they will help you out. Should be a less than $10 affair.

Talked to Nady and they said that the PMC-2X uses a standard TRS plug, which means that a NASCAR 1/4" can just take an adapter to a 1/8" and plug into the Nady. Nothing special required.
There are IMSA -> NASCAR adapters, so I think I am going to get a Sampson IMSA kit and a NASCAR adapter and then a 1/4 to 1/8 adapter. This will probably give me the most options, unless someone is using a Chatterbox, in which case I still need one more connector.
Fun... sortof?
