Been test driving a lot of 2013-2015 two door cars and I've yet to see any without deep bolstered seats. To me these are extremely uncomfortable, the push my shoulders forward and if you have a wide / muscular back they feel even worse. I understand their merits for racing and keeping you in your seat. But has any coupe kept the bench like seats from the 90s and early 2000s?

Bench seats are pretty much extinct now. I think safety standards had a bit to do with it, but a lot of people (myself included at a lanky 6'2" and 185lbs) really prefer more contoured seats, especially in sporty coupe-type vehicles where they're a boon to performance driving. Sports cars, and even just coupes are enough of a niche market now that manufacturers try to keep them as sporty as possible it seems.
Non-sport package BMW 2 and 4 series, Audi A5, Kia Koup, Hyundai Genesis may fit the bill as far as less aggressive seats. But sadly, you're asking for something this segment pretty much left behind a while ago.
That's tough. Two doors and a bench seems to be the exclusive domain of low-spec pickups.

Morgan is even bolstering their seats, except on the three wheeler, which has zero doors.
Bolstering seems mild on base Mustang seats... That's probably what I'd start with. Maybe also check out Lexus SC and Mercedes SLK, CLK, and C class coupes. They have bolstering, but it should be mild to satisfy their customer base.
Nissan Altima Coupe seats look fairly flat with just a bit of bolster. Can you name a couple of the cars that you felt had excessive bolstering in the front seats?
