My '06 Cobalt SS coupe has folding rear seats, and the base sedans do as well so I'd assume that the SS sedans would also have folding seats.
My little brother's Ion had folding rear seats as well, so you can probably count the Redline in too.

The Baja has a small passthrough to the bed. It's much smaller (even allowing for differences in scale) than GM "midgate" trucks. The Baja concept had a much larger opening. I'm guessing they had to dial it back to preserve the strength of unibody after hacking the roof off a Legacy wagon. Oh, and there is a cargo net there too.

Yup. The e36 and e46 both had this as optional. An e36 m3 is cool enough, certainly.

Here is an outlier. I personally like the odd-er cars that are less popular and can often be bought at a good price.

Sure, they are not that popular but I am also sure that they sell very slowly which should result in significant price reductions. In most of these shown here on Cars.com, the trees in the photos don't even have leaves on them so the listings must be 3-4 months old.
Most seem to be asking $13,500 but I bet you could get really close to $9,999

I just did an autotrader, nationwide hatchback manual and came up with 47, so rare but not impossible. I think it would make a great teen car. Decent looks but not too flashy to garner the wrong attention, decent mpg, choose 4 cyl or Ford V6, manual, great steering wheel and seats, decent room.
just imagine how cool the big chevy and ford cars would be with fold down rear seats!

My 1994 325i has the option. Evidently it is fairly rare in the sedans (standard on 2 doors). Definitely not good for performance as it adds weight and removes stiffness. That is 8 foot long lumber for reference.
Corollas have them, including the XRS, and a surprisingly big trunk.

Mazda 6 sedan with lift gate/hatch. Can be found with v6 and manual trans.
They are hard to find mostly due to sellers not being clear about it in their postings. I would call up each on if there is no definitive photo.

The three defining visuals for a hatchback 6 are (1) rear window wiper - easiest to ask a non-enthusiast about (2) all hatch have a rear spoiler, only some sedans do (3) the decklid is noticeably shorter on the hatch. Look at pictures once and it will be easy to spot.
The Subaru Legacy GT sedan got fold down rear seats in '07 I believe.
supra might be an option, mine had a pretty big area back there with the seats folded down. Shallow but big. Picture doesnt really capture how roomy.
