The 2015 Jeep Grand Cherokee (WK2) Laredo used as general Dadmobile, commuter, and hockey transporter is in need of new tires, I see on Tire Rack that I can get a set of Toyo Proxes STIII all-seasons for semi-cheap in the 18" needed...

While I'm not chasing any M3s in the truck, would choosing the Proxes on a general non-performance SUV be any fun or are more used as a 'look' and will not even be felt?

Since you're in PA, how is the snow/ice performance of the Toyos?  If acceptable, then go for it.  On my minivan, changing from mediocre OEM tires to Continentals noticeably improved wet traction and cornering ability; i presume emergency braking traction would improved too.  Since you're not moving to low profile / max perf tires the NVH and comfort tradeoff should be minimal.
