I'm going to be traveling west for a week soon, landing in Vegas, with a plan to road trip around the four corners region - Bryce, and a few other spots, maybe the north rim. I'll need to rent a car and want to be able to explore things a bit, but no real off-roading.
I'm thinking a medium size suv will suffice, what do you think?
Thinking about overnights in Bryce and Medicine Hat, are there others I should consider?

My family has done a couple of road trips in that area with our midsize SUV. Having just a little bit of off-road capability is a plus. We were able to explore some dirt roads and other off-the-beaten-path sights without issue.
Bryce is incredible. The scenery is beyond gorgeous. I'd recommend taking some hikes to really explore the canyons. In that same general area is Zion. If you like hiking, or at least able to hike, go there. I'm disabled with 2 bad feet but toughing out the pain to explore that park was well worth it. Seriously epic scenery in every direction.
SUV? Please, enjoy your trip a bit more than that. Most rental chains carry Mustangs, Camaros, Challengers, and the like.
If you're worried about offroad capability, a rental car will go through anything
Agreed on Bryce - you need to get out of the car and walk. The 8 mile Fairyland hike first thing in the morning is fantastic and empty, unlike the rest of the park. It's not a technically challenging hike.
Utah Rt 12 between Bryce and Torrey (basically, go east from Bryce) will blow your mind. I cannot recommend it enough.
Eldorado Canyon/Techatticup Mine south of Boulder City is worth the trip.
The desolation is almost like another planet. There's also a nice spot down the road to dip your toes into the Colorado.
I rented a Corvette Convertible to drive from San Diego to Tucson once. North Atlantic sea walls take less of a beating than rental sports cars. That pig rattled and squeaked and clunked and puked fluids everywhere. No reflection on GM, this this had been HAMMERED mercilessly. Humvees come back from Bhagdad in better shape. Ike Turner was gentle compared to the hits this thing had endured. I couldn't break 65 without fear for vibrating or veering off the road.
If it were me, Id rent a nice SUV and explore.
